RESUMEN

El presente artículo recoge los principales resultados sobre la concreción de un proyecto de encadenamiento productivo entre la Universidad de Granma, en su sede Centro Universitario Municipal de Yara, la Unidad Básica de Producción Cooperativa Antonio Maceo y la unidad gastronómica del territorio de Yara Restaurant Danubio. Responde a la necesidad de producir el canal de conejo para la gestión gastronómica del territorio, a partir de la producción cunícula con el autoabastecimiento en la alimentación de los animales y la autogestión de los materiales con producción local. Con este proyecto, que consta de varias fases, se resuelven diferentes problemáticas a la vez, dentro de las cuales está garantizar la soberanía alimentaria del territorio, la reducción de importaciones, la transferencia tecnológica, la producción del alimento animal y la generación de empleos.

PROJECT FOR CUNICULA PRODUCTION IN THE “ANTONIO MACEO” PRODUCTION UNIT OF THE MUNICIPALITY YARA

ABSTRACT

This article collects the main results on the realization of a productive chain project between the University of Granma, at its headquarters in the Municipal University Center of Yara, the Antonio Maceo Basic Unit of Cooperative Production and the gastronomic unit of the territory of Yara Restaurant Danubio. It responds to the need to produce the rabbit carcass for the gastronomic management of the territory, from rabbit production with self-sufficiency in feeding animals and self-management of materials with local production. With this project, which consists of several phases, several problems are solved at the same time, among which is to guarantee the food sovereignty of the territory, the reduction of imports, the transfer of technology, the production of animal feed and the generation of jobs.
