Resumo: O presente trabalho apresenta os resultados de investigação realizados no programa de formação permanente da Fundação Carolina, realizado na Espanha. Objetivou-se aprimorar análises pertinentes ao tema desenvolvido na tese de doutorado intitulada Análise da Relação Simbólica da Hospitalidade: desdobramentos e apropriações em fazendas históricas inseridas em espaços rurais. O referido trabalho forneceu subsídios às explorações necessárias ao desenvolvimento da tese, na medida que proporcionou observações da atividade turística no meio rural espanhol, como se dá sua gestão e planejamento. Tais observações enriqueceram as análises de caráter cultural e simbólico, no que remete ao sentido da hospitalidade. Foi ressaltada a dimensão doméstica e comercial, analisadas sob a égide do território rural, por conter o cerne da expressão da hospitalidade mais genuína, fundamentando suas manifestações mais complexas. A observação se deu através de uma análise reflexiva sobre a hospitalidade, onde foram consideradas suas contradições, assim como suas possibilidades. O estudo se configurou como exploratório, de natureza qualitativa, onde aconteceram as conversas e a inserções informais, que atenderam ao objetivo de conhecer melhor o ambiente da atividade turística rural, assim como o tipo de gestão adotada pelos proprietários das hospedagens e a relação que estabelecem com os turistas, com vistas à prática da hospitalidade em seu âmbito social e comercial. Foi possível aprofundar as discussões acerca das manifestações de elementos da cultura organizacional, das relações de gênero e suas reproduções, da dinâmica das apropriações simbólicas e o comportamento das pessoas envolvidas no negócio, desde o proprietário até demais colaboradores.

Abstract: This paper presents the results of research conducted in the ongoing formation of the Carolina Foundation, held in Spain. Aimed to enhance analyzes relevant to the theme of the doctoral thesis entitled Analysis of the Symbolic Hospitality: developments in historic farms and appropriations entered in rural areas. That work provided subsidies to farms necessary for the development of the thesis, to the extent provided observations of tourist activity in rural Spanish, how is their management and planning. Such observations have enriched the analysis of cultural and symbolic, in what refers to the sense of hospitality. It emphasized the domestic and commercial dimension, analyzed under the aegis of the countryside, to contain the core of the most genuine expression of hospitality, basing its most complex. The observation was made through a reflective analysis about the hospitality, which were considered its contradictions, as well as its possibilities. The study was configured as exploratory, qualitative, which happened inserts and informal conversations, meeting the first objective of better understanding the environment of rural tourism, as well as the management style adopted by the owners of the accommodation and the relationship they establish with tourists, with a view to the practice of hospitality in its social and commercial context. It was possible to deepen the discussions about the manifestations of elements of organizational culture, gender relations, and their reproductions, the dynamics of symbolic appropriations and behavior of the people involved in the business, from the owner to other employees.
